【原创】粤菜之首--白切鸡[8P+1P验证]
在坛子里的时间不长,但是看见里面介绍的粤菜比较少,今天跟大家讲一下

人的麻辣!因为按照本人了解,在广东白切鸡除了食用之外还有一个重要的用途,就是$jT$L`MC%m
祭祀之用!既然说到做菜,那么一定要说一下选料!

1.做白切鸡,本人觉得最好就是选用广东省信宜市的三黄鸡(不懂的请百度)

鸡龄必须要一年到年半左右,重量大概是3到4斤!而且要鲜活鸡C4b-jPd.s

2.准备一些姜和葱,事先还要准备一些冰和水的混合水

3.将姜葱用油爆香,之后连鸡一起放进锅(煲)里,锅里注清水,注水量刚刚没过鸡即可)[$s~ MN/F`@

4.先用猛火把水煮滚,大概滚五分钟,之后马上关火,盖严锅盖,利用滚水的温度把鸡焖熟

5.大概要焖45分钟左右,中途不能揭盖!起锅,把鸡捞出,马上放进事先准备冰水里面(主要是利用温度差把皮弄得爽口)

6.大概5分钟后把鸡从冰水里面捞出!斩件!
