自制豆角馅
今天晚上,突然想起家乡的饺子。呵呵!真馋啊!二话不说,开始开工。和面、制作饺子馅全部图文说明,希望爱吃饺子的朋友也能吃到我家乡的饺子。。。。呵呵! j8^(rE3c0Hb4?h8wWw

首先是和面。和面看起来简单,但是面对饺子来说,是非常重要的一道工序!饺子面一定要“硬”,要有“劲儿”,所以开始的时候不要放太多的水,这样和出的面非常的硬(开始的时候,要不停的揉,加力揉,大约揉30分钟,呵呵,吃饺子可是个力气活),这样和面之后,放置一会,大约1个小时吧,之后再看,硬度正好,有劲。 p2p sA^n@.K

下一步,就是要制作饺子馅了!首先我先做了豆角猪肉的!呵呵!我个人的最爱!先选一些好一点的猪肉,自己剁烂!这样感觉比较干净!呵呵,个人观点!xCa"k2x-u

然后,把豆角(这边叫做四季豆吧)用开水煮熟!

放入酱油2/3勺!(如果想颜色浅一些,可以放生抽,颜色深的话,可以放老抽)3EySQ5Ma

之后用力搅拌!(注意,必须按照一个方向),之后就开始让四季豆脱水!把四季豆放在一块布上,然后用手使劲的拧,必须把水全部挤出来!

把拧干的四季豆放在刚才的肉馅中,还是按照刚才的方向继续搅拌!8k1\RabvG

之后,最好放一大勺高汤。这样可以大大的提高肉馅的香度。(高汤可以使用猪排骨汤或者鸡汤。我是用的鸡汤)$H:h)W+g;]

豆角饺子也是一种饺子创举!不过豆角不容易熟。也很少作为肉馅来做饺子用。
